In a bowl, mix egg yolks, sugar and brandy. Whisk and bring to a double boiler until it reaches point sabayon.
Once the sabayon point, remove from heat and continue beating until cool, when cold, add the grated lemon and orange, hydrate 7 g of gelatin in 50 ml of ice water, once hydrated (gelatin) lead to microwave at 100 % for 30 seconds, remove from microwave and add to mixture.
Add dried fruit.
Put the sugar in a saucepan, add water to cover the sugar. Bring the pan to the fire and boil. In a bowl, beat egg whites until stiff peaks. When the syrup is at 244 ΒΊ F-248 ΒΊ F add the syrup to egg whites in a thin steady while stirring. Beat until mixture is cool. So you'll get a meringue. Add the meringue mixture.
Finally, beat the cream to half a point and add above the preparacaion. Mix with wire whisk to not cut the cream
take the measure of mold for use with parchment paper (paper is suitable for food) and cut it, do the same method with the swiss roll. Place the paper in the mold, put paper over the swiss roll, put the cream on top of the swiss roll and carry the freezer for 4 hours.
Put the chocolate in double boiler until melted.
Take a large tree leaves. Wash the leaves of the tree.
Paint with chocolate the tree leaf and bring the tree leaf to the freezer for 1 minute.
Remove leaf tree with careful not to break the chocolate
Finally Decorate your dessert as you like! Replace in the freezer until eat dessert.
