I haven't come across any foodie posts for a while so I thought I'd share with you one of my guilty pleasures in life... cookie dough truffles. What could be better than cookie dough? Cookie Dough Truffles that's what!
I stumbled across this recipe online a few months ago and I've been a cookie dough truffle fanatic ever since.

Even better, these little balls of goodness don't require any baking and they don't contain any raw eggs and they will win over anyone with a sweet tooth.. hands down. You can make huge batches with very little effort. Plus you don't have to dip ALL the dough balls in chocolate, you can have some with and some without.
You will need:
1/2 cup softened salted butter
3/4 cup light brown sugar
1 tsp vanilla
1 (14oz) can of condensed milk
2 1/4 c flour
1/2 cup mini chocolate chips
How to do it:
Combine the butter, sugar, vanilla and sweetened condensed milk in a bowl. Add the flour and chocolate chips.
Chill the dough for around 30 minutes in the refrigerator and then roll into small sized balls. Place the balls in the freezer for 2 hours (try to resist the temptation to eat them all).
Melt 12 oz chocolate chips with 1 tbs of butter. You can use the bowl over the pan of water method (I always forget the name for this). Stir and be careful not to overheat the chocolate. Turn off the heat when it starts to melt as the water will keep it warm.
THEN comes the fun part, dip the balls in the chocolate sauce using a spoon and then put them in the fridge until the chocolate hardens or I guess you could eat them like that if you wanted. Actually the best bit of this recipe is that you can eat it at various stages


But I would recommend leaving at least SOME of the balls until they're dipped and cold.
They're a real treat.
