
Anyone who knows me well will know that I have a bit of a weird penchant for mushy food. Mashed banana is one of my favorite things or anything that looks a bit like baby food. And, believe it or not, this plate of mush above actually looks appetizing to me. BUT don't judge it on appearances before you try it. It's the perfect breakfast cookie to take to work and eat at your desk, and, trust me, it tastes good. You don't have to bake it either. You can make it the night before, stick it in the fridge, and take it to work with you in your Tupperware.
It beats eggs and bacon in my book

(I actually modified the original recipe a bit... I think my version is better)
Ingredients:1/3 cup oats
1 tablespoon of nut butter (almond or peanut)
1/8 cup of milk (or soy milk if you don't like real milk)
1/2 cup of mashed bananas (or can be mashed up strawberries, pumpkin or apple sauce of you don't like bananas)
1/4 teaspoon of cinnamon
Optional: A few drops of honey.
Preparation:Mix all the ingredients together into a kind of "dough" and then put it on a plate and form into a flat, round shape. Cover with plastic wrap and refrigerate overnight. It will harden slightly from the nut butter and the oats will soften from the milk.
Then just grab a spoon and tuck in. Make it before you leave your comments
